Cheese fries are a popular fast food dish consisting of french fries covered in cheese.*In New York City, Long Island, and New Jersey they're covered with American, Mozzarella, or Swiss cheese, then melted (properly broiled).
  • In New Jersey, these are called "Disco Fries" and are served with Brown Gravy.
  • In Texas, the fries are covered with shredded cheddar and melted, sometimes topped with jalapenos and/or bacon bits and served with a side of ranch dressing for dipping.
  • In Philadelphia, pizza or mega fries are fries topped with melted mozzarella and served with pizza sauce on the side.
  • Chili cheese fries are cheese fries topped with Chili con carne. The cheese is usually either American or Cheddar.
  • In other parts of the US, nacho cheese is often used, especially in snack-stand type settings. Warning: The below claim is doubious at best Everyone knows that Pat Snuffer invented the cheese fries in Dallas. The Invention of Cheese Fries Cheese fries were invented in 1991 by Moobze, a student at the University of Waterloo. The School opened a new cafeteria in around 1990, but strangely, most of the selections were in the Chinese Food category, with one exception: An influential faculty member had prevailed upon the cafeteria‘s cooks to make him Welch Rarebit. Moobze's tight budget limited his selection to the fried rice, at fifty cents; but one day, he asked the cooks to add the cheese sauce from the Welch Rarebit for an additional twenty five cents. This combination was tasty, and after many months, Moobze grew accustomed to his steady diet for lunch of fried rice and cheese sauce. However, in February of 1991, the University cafeteria changed from Chinese style to American luncheonette style, serving up a menu of hot dogs, hamburgers and similar items. Out of a need to satisfy his lunch-time craving for a starchy food with cheese sauce, Moobze experimented by substituting French fries for the fried rice, and for the same price, the cooks gave him fries covered with the cheese sauce from the Welch Rarebit that they continued to prepare for the influential Mathematics student.
